My Recipe: Chocolate mint swirl fudge

This is my recipe....have you posted yours yet????

Prep Time 15 mins
Cook Time 10 mins
Serves 20 pieces


Ingredients

4 cups pure icing sugar
155ml cream
150g unsalted butter
225g peppermint cream-filled chocolate, broken into pieces
1 tablespoon liquid glucose
2 x 35g peppermint crisp bars, chopped
80g white chocolate, roughly chopped


Here's how

1. Line a 20cm (8 inch) square cake tin with aluminium foil and brush lightly with melted butter or oil. Combine the icing sugar, cream, butter and the peppermint cream-filled chocolate, with the glucose, in a medium heavy based pan; stir over medium-low heat until smooth. Stirring constantly, bring the mixture slowly to the boil. Keep stirring while the mixture boils for 5 minutes.

2. Remove the pan from the heat and use a wooden spoon to beat the mixture until it has cooled, lost its shine and has thickened slightly. Quickly stir the chopped peppermint crisp into the mixture. Pour the mixture into the prepared tin.

3. Place the white chocolate in a small heatproof bowl and stand it over a pan of barely simmering water, until softened. When soft, stir with a wooden spoon until melted and smooth. Take care not to overheat the chocolate. Drop spoonfuls of the white chocolate randomly onto the surface of the peppermint crisp mixture in the tin. Use the tip of a knife or a skewer to swirl the two mixtures together. Allow to set.

4. When the fudge is firm, remove from the tin and carefully peel away the aluminium foil. To serve, cut into squares or rectangles. The fudge will keep for up to 3 days, stored in an airtight container. Refrigerate only if the weather is very hot.

A non-Whocolate Theme

What great joy it gives me to see so many staff members engaged in the Webolution. However, I am a little concerned that it is bringing out the cheeky side in some people.

It amazes me how one particular staff member who mind you, broke the world record for the number of attempts it took to get her blog working, has the nerve to tell me that I need an RSS feed on my blog so that she could subscribe and receive email notifications when I add new content to the blog. Saving her the time of getting onto my blog to discover if anything new had been added. MY MY MY!!!!

Only kidding Wosemary! I love how everyone is posting comments on each others blogs, it is adding to the interactivity of the Webolution and making it FUN which is what it is all about.

Tomorrow is Friday and I am tipping it might be a chocolate day!!!!

The Chocolate Template

Some of you are probably asking, 'Why a Chocolate' theme? This is a special template that I downloaded from the Internet and from the first time I layed eyes on it I was in love and I thought to myself how fitting! Yes, I do have a love for chocolate, who doesn't? Although I must say one thing that I have learn't during my many years at Hobsons Bay is that Librarians love chocolate. I often recall people in the Workroom at Altona, saying 'I feel like Chocolate'. I once thought it was refined to Friday afternoons however, I soon realised that it applies all day everyday. People even have lolly jars on desks so that there is an endless supply of chocolate and lollies for staff in the event that someone needs a pick me up. I won't name names (Wonnie) but some staff just can't decline the tempation of chocolate or in fact to any treat! The mere mention on chocolate and everyone's mouths start watering. Fortunately for us we have a Coles Supermarket and Lolly Shop nearby the Altona Library which is visited frequently to fulfil the many staff cravings. Let's not forget the times that staff bring in the fundraising chocolate boxes, they never last long. I say anytime you have chocolates to sell for fundraising, Altona's the spot to bring them!

I often wonder whether it is just Hobsons Bay Librarians who love chocolate or Librarians on the whole. Maybe one day I will find out but until then I will continue to enjoy sharing the love of chocolate.
